Never had endive or boiled okra (though we loves fried okra, precious!), so I can't comment there. As for eggplant, I adore eggplant parmesan, particularly when the eggplant is thin and crispy. Eggplant recipes where the eggplant is slimy or bitter...bleh.
Uno's Pizzeria successfully uses eggplant on pizza, so I know it's possible!
And avocado...I love that too. I think I was meant to be a vegetarian.
