Bobby makes an eggplant parmesan that I think that even many eggplant-haters might like. The eggplant is cut thin and cooked till it's crispy, so it's not slimy or bitter, which are two ways to ruin a good eggplant dish.

But I'm vegetarian, so I have developed a taste for most vegetables that "normal" people hate. :^P
